Grammy's Chocolate Cake

This is the most wonderful chocolate cake ever.  Grammy only makes it once a year because is so much work.

  

  • 1 cup unsifted unsweetened cocoa
  • 2 cups boiling water
  • 2 3/4 cups sifted flour
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 cup butter softened
  • 2 1/2 cups granulated sugar
  • 4 eggs
  • 1 1/2 tsp. vanilla extract


  1. In a medium bowl combine cocoa with boiling water, mixing with wire whisk until smooth.
  2. Cool completely.
  3. Sift flour with soda, salt and baking powder together.
  4. Preheat oven to 350 degrees.
  5. Grease and flour 3 - 9" round pans.
  6. In a large bowl, beat at high speed the butter, sugar, eggs and vanilla for about five minutes.  
  7. Then beat at low speed the flour mixture (in fourths) alternately with the cocoa mixture (in thirds), beginning and ending with flour mixture. 
  8. At this point DO NOT OVER BEAT.
  9. Divide evenly into the three pans.
  10. Bake for 25 - 30 minutes.

Now it is time to make the yummy frosting.

This is a perfect chocolate frosting for Grammy's Chocolate Cake.  Try to engage someone to help you mix by hand this frosting because it will take some time.


  • 1 package (6 oz.) semisweet chocolate pieces
  • 1/2 cup light cream (half & half)
  • 1 cup butter
  • 2 1/2 cups unsifted powdered sugar

  1. In a medium saucepan combine the chocolate pieces, light cream and butter.
  2. Stir over medium heat until smooth.
  3. Remove from heat.
  4. With a whisk blend in 2 1/2 cups powder sugar.
  5. Put the frosting bowl in the freezer and start cooling while every few minutes take out and hand beat until the frosting gets to the right spreading consistency.
  6. Apply to each layer of the cake and on top give it the Grammy swirls for a beautifully decorated cake.


Refrigerate the frosted cake one hour before serving.  This is the ultimate chocolate cake.

This is a chocolate cake that will be the hit of the party or occasion.

Grammy makes this for meal when guest come over.  This can be made in advance of the dinner so there is not so much confusion when guest arrive.


  • Cut the tops off of 6 medium green peppers, remove the seeds and membrane.
  • Precook (parboil) the green peppers cups in boiling salted water (a couple of teaspoons of salt) for about 5 minutes then drain.
  • Sprinkle inside of the cups with a little salt and little pepper.


  1. In a medium sized sauce pan cook 1 pound ground beef and 1/3 cup chopped onion till meat is lightly browned.  Season with 1/2 teaspoon salt and dash of pepper.  Then add one 1-pound can tomatoes, 1/2 cup of water, 1/2 cup uncooked long-grain rice and 1 teaspoon Worcestershire sauce.
  2. Cover and simmer untill rice is tender (about fifteen minutes).
  3. Stir in 4 ounces sharp process American Cheese shredded (about one cup).
  4. Stuff peppers, stand upright in a 10 x 6 x 1 1/2 inch baking dish.
  5. Bake, uncovered at 250 degrees for 20 to 25 minutes.  
  6. This will serve 6 hungry people.
